The Project
Asian cuisine demands more from a kitchen than almost any other concept. High-BTU wok ranges, heavy grease loads, and intense heat require ventilation and grease management built beyond standard spec. We built oversized hood systems, upgraded make-up air, robust fire suppression, and grease interceptors sized for the real demands of the menu, and sequenced inspections so approvals never held up opening day.
